Cowtown Veggie Chili

Ingredients

Ingredients:
- 1 pound ground beef
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- 2 onions, diced
- 1 ½ cups carrots, peeled and diced
- 2 tablespoons Amigos Cowtown Chili powder (to taste)
- 1 teaspoon oregano
- 1 teaspoon salt
- 4 cups zucchinis, diced, 2-3 medium zucchinis
- 4 cups squash, diced, 2-3 medium squash
- 15 oz can tomato sauce
- 15 oz can diced tomatoes

Directions

We are always trying to find an easy and fun way to get our vegetables in! Our Cowtown Veggie Chili is a great soup to enjoy this fall, while still getting your veggie fix. Clean ingredients have never tasted so good! 🫑🥕🧅😌

Directions:

  • Chop all veggies and separate
  • In a seasoned skillet brown beef and garlic. Cook until beef is thoroughly cooked and browned. Drain off excess fat, set aside.
  • Add oil, onions, carrots, and seasonings to the skillet and cook until translucent over medium-high heat. Once onions are golden and veggies are midway cooked, add zucchini and squash cook for 2-3 minutes. Stir everything well!
  • Add cooked beef, tomato puree/sauce, and tomatoes into the pot and stir well.
  • Bring chili to a boil, stirring often, reduce the heat and simmer for 20 minutes.
  • The longer you let it simmer, the better it tastes!
  • Add avocado, cheese, sour cream and any other toppings!
  • Enjoy with a slice of cornbread!
