- 1 pound ground beef
- 2 cloves garlic, chopped

- 2 onions, diced
- 1 ½ cups carrots, peeled and diced
- 2 tablespoons Amigos Cowtown Chili powder (to taste)

- 4 cups zucchinis, diced, 2-3 medium zucchinis
- 4 cups squash, diced, 2-3 medium squash
- 15 oz can tomato sauce
- 15 oz can diced tomatoes

We are always trying to find an easy and fun way to get our vegetables in! Our Cowtown Veggie Chili is a great soup to enjoy this fall, while still getting your veggie fix. Clean ingredients have never tasted so good! 🫑🥕🧅😌
Directions:
- Chop all veggies and separate
- In a seasoned skillet brown beef and garlic. Cook until beef is thoroughly cooked and browned. Drain off excess fat, set aside.
- Add oil, onions, carrots, and seasonings to the skillet and cook until translucent over medium-high heat. Once onions are golden and veggies are midway cooked, add zucchini and squash cook for 2-3 minutes. Stir everything well!
- Add cooked beef, tomato puree/sauce, and tomatoes into the pot and stir well.
- Bring chili to a boil, stirring often, reduce the heat and simmer for 20 minutes.
- The longer you let it simmer, the better it tastes!
- Add avocado, cheese, sour cream and any other toppings!
- Enjoy with a slice of cornbread!
