Easy Breakfast tacos- bacon egg and cheese with spicy taco seasoning

Tipsy Breakfast Tacos

• 6 tortillas, flour or corn
• 8 eggs
• 3 tsp Amigos Tipsy Taco
• 10 slices Bacon
• Shredded cheddar cheese
• Garnishes: cilantro, salsa

    1. Cook the bacon to your liking and set aside on a paper towel to drain. If you fried the bacon in a skillet, drain most of the bacon grease and set the pan aside to cook the eggs.
    2. Heat the tortillas one at a time on a skillet set to medium-low heat. Once the tortilla forms a bubble, it is ready to flip. Keep the tortillas in a warming drawer or tortilla warmer while you cook the eggs.
    3. Beat the eggs in a large measuring cup and add Tipsy Taco, continuing to beat until combined.
    4. Pour the eggs in a skillet and cook on low heat- scrambling the eggs low and slow makes them extra creamy and delicious. If you want to mix your bacon into the scrambled eggs, go ahead and crumble it into the skillet now. Stir constantly for about 5 minutes.
    5. When the eggs are done, it's time to assemble your tacos. Start with the hot eggs and if you kept your bacon in strips, lay those on next. Sprinkle with the shredded cheese and top with your preferred salsa and a bit of cilantro. 
    6. It don’t get no better than this!
