Taco Salad with Adobo Mojo Dressing


- 1 lb ground beef
- 3 tbs Tipsy Taco seasoning
- 1 can of black beans
- 2 heads of romaine lettuce
- ½ cup cherry tomatoes
- 1 bell pepper
- 1 avocado
- ½ cup shredded cheese

- 2 cups fresh cilantro
- ¼ cup lime juice
- 1 avocado
- 2 teaspoons of Adobo Mojo seasoning (or to taste)
- 2 teaspoons maple syrup or honey
- ½ teaspoon sea salt
- ½ cup extra-virgin olive oil


  • For the dressing, add all ingredients except the olive oil to a food processor or blender and blend until well combined. Then, slowly add the olive oil and blend until smooth.
  • Cook the ground beef over medium heat until brown and add in Tipsy Taco seasoning, then set aside.
  • In another pot, heat the black beans over medium heat until warm and set aside.
  • Give the two heads of lettuce a rough chop into bite size pieces. Cut the cherry tomatoes in half, give the bell pepper a medium dice, and thinly slice the avocado.
  • Assemble the taco salad by adding the chopped romaine to a large bowl and then top it with the cherry tomatoes, bell pepper, avocado, shredded cheese, cooked ground beef, and black beans. Finish the salad by drizzling the Adobo Mojo dressing on top.
