Texas Burger with Spicy Aioli

For the Burgers
• 3 lb ground beef
• Amigos Texas Blend
• Butter
• Burger Buns
• Fresh Tomato
• Sprouts (micro greens)
For the Spicy Aioli:
• 2 Egg yolks
• 2 tsp Amigos Texas Blend
• 1/2 Large lemon or 1 small lemon
• 1 cup Olive oil
• 3 lb ground beef

For the Spicy Aioli:
• 2 Egg yolks
• 2 tsp Amigos Texas Blend
• 1/2 Large lemon or 1 small lemon
• 1 cup Olive oil

- Makes 8 burgers
- Make the Spicy Aioli: Combine the egg yolks, Texas Blend, and lemon juice in a blender or food processor, and blend for 30 seconds. Add the olive oil in an extremely slow stream, almost just a drop at a time. This emulsifies the oil. Once the oil is added, set the aioli in the fridge while you prepare the burgers.
- Fire up the grill to medium-high heat, about 400˚F. Form the ground beef into 8 patties and place onto a baking sheet. Generously season with Texas Blend to your liking.
- Place the patties directly onto the grill and cook for about 3 minutes. Flip and shake more Texas Blend, then top with cheese. After about a minute, check the internal temperature. It should measure at 135˚F for a juicy, medium rare burger.
- While the burgers are resting, toast the buns. Spread a pat of room temperature butter on each bun and place face down on the grill for about 15-30 seconds.
- Assemble the burgers: use the toppings of your choice. We love to add fresh microgreens and sliced tomatoes. Don't forget your homemade aioli!
