Fried Green Tomatoes

• 4 large green tomatoes or 8 smaller ones
• 2 eggs
• ½ cup milk
• 1 cup flour
• ½ cup cornmeal
• ½ cup bread crumbs
• 3 tsp Adobo Mojo
• Vegetable oil for frying

- Wash and slice the tomatoes in quarter to half-inch thick slabs.
- Create your frying assembly line. Add the flour to one dish, mix eggs and milk mixed together in another, and cornmeal, breadcrumbs and Adobo Mojo to a third dish.
- Take each tomato slice and coat in flour, then wet ingredients, then the Adobo Mojo fry mix. Go ahead and coat all your slices before you begin frying.
- Heat about a half inch of oil in a cast iron skillet on medium high heat.
- While the oil is heating up, line a plate with a couple of paper towels to absorb excess oil. You’ll place the tomatoes here when they are done frying.
- Sprinkle a little flour in the oil. If it sizzles, you’re ready to start frying. That’s the oil telling you it’s hot and ready!
- Place four or five tomato slices in the hot oil, one at a time. Let them fry until the bottom side is golden brown, then flip them over. Once both sides are fried to gold brown perfection, remove each slice one at a time to drain on the paper towel. Repeat until you’re done.
- Serve hot with our Spicy Aioli made with Texas Blend, but try ‘em on their own first! You may love it so much you don’t even need sauce!
